Prior to becoming Executive Chef of Sage, he was the Executive Chef of Cilantro Restaurant & Wine Bar in 2001. His interest in applying French cooking to Japanese ingredients started when he was serving as Chef de Cuisine with the Japanese Embassy in West Africa.

He later took up the post as Chef de Cuisine with the Embassy of Japan in Malaysia in 1999.
