I wait for 75% off sales on good quality sheets, then use them for years and years.
I don't aim for high thread count sheets (as other have said the higher thread counts sheets have finer threads, rather than more threads), but it does seem that I bought a 1000TC set the last time around. It will be interesting to see how they go.
I've bought high end cotton sateen sheets in the past and have never had them pill. But, I rarely use the dryer (and never bleach).
